Cloud of eggs omelet

Ingredients
3 eggs
1/4 Red onion
Robot peppers (quarter of each color)
1 tspn. Olive oil/ coconut oil
Salt and pepper (season to taste)
Half cup baby tomatoes or 1 large tomato
5 Mushrooms
5 Rocket leaves
1/3 Avocado
1 tablespoon cottage cheese (low fat) or grated gouda cheese
Preparation
Chop onions, peppers,mushrooms, and tomatoes
Saute in hot oil (teaspoon) until water fully evaporates
Dish out and set them aside

Egg mixture
Separate egg whites
Egg yolks
Whisk separately until foamed and stiff
Combine eggs together and gently mix, do not over mix as this will deflates the egg mixture.
Coat the pan with olive oil or coconut oil
Use non stick pan to fry.
Let fry for 3 seconds and flip sides to prevent eggs from sticking and breaking.
Put in lid on and steam fry for 5 minutes or until eggs begin to cake.
Sprinkle salt and pepper (season to taste)
Garnishing;
Sautéed; Onions
Peppers
Tomatoes
Mushrooms
Rocket
Avocado
And spoon of cottage cheese (crumbled)
You can substitute veggies with your favorite or choice
